Wipe the plums, remove the stalks and the pits. Pour the sugar into the preserving pan, moisten with water to barely cover. Bring to a boil and boil for 5 minutes. Then pour in the plums and the juice of 3 lemons. Wait until boiling again. Leave to boil for 10 minutes, remove the Mirabelle plums, drain in a sieve. Cook the syrup further until falling from the skimmer like a thread. Put in the fruit again and allow for 15 minutes of cooking after bringing to a boil. Pour into jars and leave to cool before sealing.
